Cantillon Cuvee Saint-Gilloise 2025 | Lambic

A new brew, created by Jean Van Roy in honor of the 2003-2004 Division III title of the local football team Union St. Gilles and their promotion to Division II.

Cuvée des Champions is not a traditional 'gueuze', as it is made exclusively from two-year-old lambic from 2001, rather than a blend of older and younger lambic. It is also dry-hopped in the barrel for three weeks with fresh Styrian Goldings hops. Bottle fermentation is achieved by adding a small amount of candy sugar.
