Freeze-concentrated cherry mead, aged for 10 months in Heaven Hill bourbon barrels.

Stevnsberry CRYO is a waterless melomel, but taken to the next level. The fruit portion is freeze-concentrated to achieve a remarkable depth of cherry flavors. The mead then matured for 10 months in a barrel that previously contained Heaven Hill bourbon. This developed layers of caramel, bourbon, and oak, while maintaining its vibrancy and fresh fruit profile.

The result is a deeply concentrated expression of cherry, honey, and barrel. Velvety in texture, with a lively cherry acidity balanced by sweet honey and oak. This interplay ensures a finish that lingers long after each sip.

Approximately 600 kg of Stevnsbær cherries are needed to fill one barrel of this product!
